Cypriot cuisine inspired me to make the most of local fresh ingredients. Vegetables, herbs, seafood and olive oil create a delicious landscape of flavors that meets the island’s geographical position, right in the eastern mediterranean sea.

Have a taste of sunny Cyprus with this fresh seafood recipe.

What to have?

Potatoes.

1,5 big spoon of tomato paste.

One tomato.

Half an onion.

Black pepper.

Flavor leaf.

Mushrooms.

Shrimps.

Calamari.

Green, red and yellow peppers.

A pinch of salt to your taste.

How to do it?

  1. Cut the potatoes into small pieces and boil them in salty water. 

  2. Put the shrimps, calamari, flavor leaf and 1,5 big spoon of tomato paste in a work. Stir everything for 3 mins on a soft fire, and then add a big glass of water. Your fish must be swimming in a thick red sauce. 

  3. Cut the tomato, the onion, and the peppers into small pieces.

 Mix everything with one big spoon of olive oil and one big glasses of water. Put your food on the soft fire and let it cook for 40 minutes without forgetting to check it every 5 minutes and stir it.

This dish is meant to be served individually in a bowl.
